Orange, Avocado and Mint Pudding

This citrus-y blend is a staple in our homes during the winter months when oranges are at their peak.  This mildly sweet and ultra creamy blend is so versatile that before you know it, you’ll be whipping it up for a satiating on-the-go breakfast, a tasty lunch and/or a sweet-tooth satisfying snack. Giddyap!


1 large orange, (Sumo, navel, Carra Carra are great!), peeled

1 small avocado(or ½ large), peeled and pitted

1  large handful of mint, say ½ cup leaves


Shopping List:

1 large orange, (Sumo, navel, or Carra Carra)

1 small avocado

1 bunch mint



Blend in a handheld blender as it’s a single serving.  Highspeed blender works as well. Voila!


Note: Sometimes this fresh and delightful combo blends up thick like pudding and sometimes, with a really juicy orange and a super small avo, it’s thinner like a smoothie. You can always add a little water or orange juice, if you like a thinner consistency, but we are crazed for the pudding-like texture. Sumo oranges are killer, if you can find them, navels, Carra Carra and/ or mandarins work as well.
