Green Goddess: Tequila Cilantro Lemon Ginger Slush

This unexpected blend of tequila, cilantro, lemon and ginger is killer! This slush-y cocktail can be served any time of year. Make a batch or 2 of honey ginger syrup ahead of time and store in the refrigerator. It provides a great zing for any cocktail.

Ingredients:

1/4 C honey ginger syrup (recipe below)

1/4 C lemon juice, about 2 lemons

1/3 C roughly chopped cilantro

1/2 C tequila (4 oz)

11/2 C ice, plus more as needed

 

Shopping List:

2 lemons

1 bunch cilantro

tequila

honey

ginger

 

Directions:

Combine the simple syrup, lemon juice and cilantro leaves in a blender and blend until combined. Add the tequila and crushed ice and blend until frothy. Add more ice if needed. Pour into 2 rocks glasses and garnish with a lemon wedge.

 

Honey Ginger Syrup:

1/2 C honey

1/3 C roughly chopped ginger (no need to peel)

1/4 C water

 

Combine all ingredients is a small saucepan. Bring to a boil, cover and simmer for about 15 minutes. Remove from heat and let sit for about an hour. Strain. Store in the refrigerator for up to 2 weeks.  Makes about 3/4 cup syrup
